Creamy lemon asparagus pasta recipe

Creamy lemon asparagus pasta is a vegetarian dish that can be prepared in thirty minutes and is both comforting and very tasty i refer to it as comfort food on a springtime basis

Ingredients – 34 lb dried pasta – 1 lb asparagus trimmed and cut into 2 inch piece – 8 ounces heavy cream – zest of 1 lemon – 3 tbsp lemon juice – 12 tsp salt – 2 tbsp unsalted butter – 14 cup pasta cooking water – fresh cracked pepper and parmesan cheese for serving


Step1 the pasta should be cooked in a large saucepan of water that has been seasoned until it is just al dente the majority of the time i cook it for a few minutes less than what is specified on the package

Step2 when the cooking time is down to the final minute add the asparagus with one cup of the cooking water set aside drain the mixture the cream should be poured into a skillet that has deep sides and is large enough to contain the finished pasta the skillet should then be brought to a simmer salt lemon zest and lemon juice should be added

Step3 in order to melt the butter add it to the sauce in increments of one tablespoon at a time and whisk it in you can modify the amount of salt or lemon juice by tasting it

Step4 after the pasta and asparagus have been rinsed add them to the skillet and toss them together at the same time add approximately a quarter cup of boiling pasta water

Step5 the dish should be served immediately with a generous amount of parmesan cheese and freshly cracked black pepper to garnish
